چکیده

بادرشبی، با نام علمی Dracocephalum moldavica L. یک گیاه دارویی و  معطر علفی و یک‌ساله از خانواده نعناعیان (Lamiaceae) است. در این تحقیق، روغن و عصاره‌های آبی و اتانولی بذر بادرشبی (Dracocephalum moldavica L.) تهیه شد و صفاتی مانند کمّیت و کیفیت اسیدهای چرب، میزان فیتوسترول‌ها، مقدار ترکیب‌های فنلی و فلاونوئیدی و درصد مهار رادیکال‌های آزاد DPPH اندازه‌گیری و مقایسه شدند. روغن بذر به روش پرس سرد استخراج شد. نتایج نشان داد که بیشترین مقدار پالمتیک اسید و استئاریک اسید (به‌ترتیب 9.4% و 3.55%) در عصاره اتانولی وجود داشت. این در حالیست که بالاترین درصد اولئیک اسید (9.7%)، لینولئیک اسید (19.53%) و آلفا-لینولنیک اسید (59.01%) از روغن حاصل از پرس سرد، استخراج شد. بالاترین مقدار فیتوسترول کل (833.86 میلی‌گرم بر 100 گرم وزن خشک) از بذرهایی که با اتانول عصاره‌گیری شده بودند بدست آمد. عصاره اتانولی حاوی بیشترین مقدار گاما-توکوفرول (38.72 میلی‌گرم بر 100 گرم وزن خشک) و توکوفرول کل (39.21 میلی‌گرم بر 100 گرم وزن خشک) بود. بیشترین محتوای تام فنلی (17.4 میلی‌گرم معادل اسید گالیک بر گرم خشک نمونه) و فلاونوئیدی (112.12 میلی‌گرم معادل کوئرستین بر گرم خشک نمونه) در عصاره اتانولی بذر بادرشبی و کمترین مقدار آنها (نزدیک به صفر) در روغن دیده شد. بالاترین درصد مهار رادیکال‌های آزاد DPPH نیز در عصاره اتانولی دیده شد. به‌طورکلی، اتانول به‌عنوان بهترین حلال برای استخراج عصاره بذر بادرشبی جهت حفظ بیشتر صفات کیفی پیشنهاد می‌شود.
