چکیده

به‌منظور بررسی اثرات مصرف 4/27 میلی‌گرم نیترات سدیم یا سطوح مختلف صفر، 2/0، 4/0 و 6/0 درصد عصاره‌ آویشن (Thymus vulgaris L.) در آب آشامیدنی حاوی نیترات سدیم بر رشد، خصوصیات لاشه و برخی فراسنجه‌های خونی، تعداد 220 قطعه جوجه نر یک‌روزه نژاد راس (308) به‌طور تصادفی در 5 گروه انتخاب شدند. تفاوت معنی‌داری برای مصرف خوراک، افزایش وزن و ضریب تبدیل خوراک بین جوجه‌های گوشتی تیمارهای مختلف در کل دوره‌ آزمایشی مشاهده نشد (05/0<p). البته استفاده از سطوح مختلف عصاره‌ آویشن یا نیترات تأثیری بر میزان گلوکز، کلسترول و تری‌گلیسرید و همچنین سطح آنزیم‌های آسپارتات‌آمینوترانسفراز خون جوجه‌های گوشتی نداشت (05/0<p). مصرف نیترات میزان HDL را به‌طور معنی‌داری در مقایسه با تیمار شاهد افزایش داد (05/0>p) ولی مصرف سطوح 2/0% و 4/0% آویشن به همراه نیترات باعث کاهش میزان HDL گردید. در مقایسات مستقل هم مصرف عصاره‌ آویشن منجر به کاهش HDL خون گردید. همچنین وزن نسبی ران، سینه، کبد، قلب، شش، طحال و چربی محوطه‌ بطنی تحت تأثیر تیمارهای آزمایشی قرار نگرفت (05/0<p). به‌طور کلی مصرف عصاره‌ آویشن تأثیری بر عملکرد جوجه‌های مصرف‌کننده‌ نیترات نداشت ولی از طریق کاهش اکسیداسیون LDL موجب کاهش سطح HDL خون جوجه‌های گوشتی گردید.
