چکیده

استرس خشکی باعث تحریک ساخته شدن گونه‌های اکسیژن فعال در کلروپلاستهای گیاهی می‌شود و گونه‌های اکسیژن فعال نیز سبب پراکسیداسیون لیپیدهای غشایی و تخریب غشای سلولی می‌شود. انیسون (Pimpinella anisum L.) یکی از گیاهان دارویی بسیار معطر است که ارزش صادراتی فراوانی دارد. در این پژوهش، آسکوربات با هدف اهمیت کنترل استرس اکسیداتیو در تحمل به کمبود آب، بکار گرفته شد و تغییرات محتوای رنگیزه‌ای برگها، ترکیبهای فنلی کل و محتوای مالون دی‌آلدئید بر روی گیاه بررسی شد. طی یک مطالعه گلدانی، تنش خشکی براساس نسبتهای مختلفی از ظرفیت زراعی در سه سطح شاهد، متوسط و شدید (به‌ترتیب 100، 60 و 25 درصد ظرفیت زراعی) و آسکوربات با یک غلظت mM 4/1 به صورت مه‌پاشی اعمال گردید. با پیشرفت تنش، محتوای کلروفیل و نسبت کلروفیل a به کلروفیل b کم شد، در حالی که مقدار فلاونوئید و آنتوسیانین افزایش یافت. همچنین در اثر دهیدراتاسیون، افزایش کاروتن و گزانتوفیل تنها در تنش متوسط گزارش شد. آسکوربات، میزان کلروفیلها و کاروتنوئیدها را زیاد نمود اما میزان فلاونوئید و آنتوسیانین را کاهش داد و تأثیر چشمگیری در افزایش ترکیبهای فنلی کل اندامها در تمام سطوح داشت. همچنین مقدار مالون دی‌آلدئید در شرایط تنش متوسط نسبتاً ثابت ماند ولی در شرایط تنش شدید به‌طور معنی‌دار افزایش یافت که حضور آسکوربات منجر به کاهش مؤثر این متابولیت شد. بنابر نتایج بدست آمده در این پژوهش، آسکوربات خارجی توانست با مکانیسمهای مختلفی توانایی گیاه انیسون را در پاسخ به تنش خشکی افزایش داده و اثر محافظتی در برابر اکسیداسیون لیپیدها ( که ناشی از خشکی می‌باشد) داشته باشد.
