Saffron spice is the dried, dark- red stigmata of crocus sativus. L flowers is a very high valve material due to its applications, mainly those to provide color and flavor to foods . Dietary factors play a significant role in both cancer promotion and prevention. Carotenoieds are one of the most common dietary compounds that have been studied as cancer- preventive agents. Recently extracts from natural products and saffron ave also been shown to exhibit anticancer activity.the main pigments of saffron are mono – and di- glycosyle esters of the polyene dicarboxylic acid crocetin, where D-glycose and D- gentobiose occurs as carbohydrate residues.For the extracton of saffron 20 gr was successively and exhausively extracted with light petroleum , diethyl ether and methanol in a soxhlet extractor in the dark. The methanol extract contained the glycosede carotenoids of saffron. Separation of the constituents was achieved by silica gel TLC using diffrents solvent (mobile phase) system. The TLC method was time consuming and also gave an overestimation of the colour princiles.

Phytosterol, a general term applied to a large number of plant-derived sterols, is found exclusively in all organs of higher plants and are often enriched in oilseeds. Phytosterols have wide bioactivity in humans, in particular as an efficacious cholesterol-lowering agent and consequently may have a preventive role against cardiovascular disease and also a variety of cancers. Phytosterols occur in high concentrations in vegetable oils such as the Echium (Boraginaceae family). In Iran, four species of Echium have been identified so far. In respect of unique roles of phytosterols in human health, the aim of the present study was determination and quantification of sterols in seeds of two Iranian Echium. Seeds were collected from six populations of two Iranian Echium species (E. italicum and E. amoenum) from their natural habitats. After extraction with appropriate solvents, the existence of sterols in seeds was characterized by TLC and then their contents were measured using GC and spectrophotometeric methods. Total phytosterol contents were determined using the standard curve equation obtained from the changes in the absorption of solutions at a wavelength of 640 nm. Results from GC analyses showed that total phytosterol contents based on total seed dry weight were also significant, as the highest amount (399/4 mg/100g D.W) was detected in seeds of E. italicum (Alamute Qazvin population) and the lowest (112 mg/100g D.W) was measured in seeds of E. amoenum species (Hezarjarib population). Also, campesterol (20-50% of total phytosterol) and β-sitosterol (more than 50% of total phytosterol) were the main constituents of the phytosterols in all seeds. Accordingly, seeds of E.amoenum (Behshahr population) with 141 mg/100g β-sitosterol and seeds of E. italicum (Alamute Qazvin population) with 212 and 141/4 mg/100g campesterol and β-sitostanol were respectively identified as the richest samples.

Dragon's head (Lallemantia iberica F. & C. M.) an annual or perennial herb, or dwarf shrub that originates in the Caucasian region and was cultivated for ornament and may be domesticated in East and East Central Europe. Dragon head was cultivated for its seeds from which oil is extracted. The seed contains up to 30% of a drying oil. One of effective compounds in this plant is mucilage. Mucilage has different applications in the broad field of pharmacy and medicine now. Mucilage was extracted from dragon's head seed and was identified by using thin-layer chromatography. Method involves the following steps: first by extraction, purification, dialysis, lyophilization, deionization, hydrolyze and TLC analysis for choosing the best separation system, these separation systems were: 1- Silica gel G 60 HF plate using n- butanol: acid acetic: water (50:25:25 v/v) as mobile system. 2- Silica gel G 60 HF plate using chloroform: methanol (60:40 v/v) as solvent system. 3- Kieselguhr G plate using n- butanol: acetone: phosphoric acid (40:50:10 v/v) as mobile system. Finally, the best results achieved by using n-butanol: acetone: phosphoric acid (40:50:10 v/v) as mobile system on the Kieselguhr G plate as stationary phase. Lallemantia iberica mucilage was separated into seven spots. Mucilage of Lallemantia iberica seeds was composed of galacturonic acid, galactose, mannose, arabinose, xylose, glucose and rhamnose monosaccharide. This result is useful for more and better characterization of dragon's head mucilage for application in food industry.
